About the Author

Mary Molt, Ph.D., R.D., L.D., is assistant director of Housing and Dining Services and assistant professor of Hotel, Restaurant, Institution Management, and Dietetics (HRIMD), Kansas State University. She holds a bachelor's degree from the University of Nebraska-Kearney, a master's degree from Oklahoma State University, and a Ph.D. from Kansas State University. Dr. Molt has 31 years of professional experience at Kansas State University, with a joint appointment in academe and food service administration. Current responsibilities include team teaching Food Production Management, assisting with supervised practice experiences for senior students in Dietetics, and directing management activities for three residence hall dining centers serving more than 8,000 meals per day. Dr. Molt is active in the American Dietetic Association, Kansas Dietetic Association, and the National Association of College and University Food Services (NACUFS). Twice she was recognized with the NACUFS Richard Lichtenfelt Award for outstanding service to the association. In 1995, Dr. Molt received the Theodore W. Minah Award, the highest honor given by NACUFS, for exceptional contribution to the food service industry. The Award For Excellence in the Practice of Management was given to Dr. Molt in 1997 by the American Dietetic Association. She serves on several University committees, advises students in Kappa Omicron Nu, and holds membership in several honor societies including Kappa Omicron Nu, Delta Kappa Gamma, Phi Upsilon Omicron, and Phi Kappa Phi.

A Must-Have!

I discovered this book several years ago while working as a hall director for a cooperative living residence hall. The college women who lived there cooked for their fifty housemates.
Molt's book was a godsend for us; the instructions were basic, easily understood, and useful.
The best aspect of Food for Fifty is the fact that, recipes aside, the book gives excellent tables and instructions for cooking times/weights/quantities beyond the recipes it lists. In other words, it is quite useful when adapting one's own recipes to meals for 50 or 100 people.
I have since used Food for Fifty in another food service job, where it was equally useful and well-received. I highly recommend it to anyone, whether you're doing institutional meals, church meals, or simply work with large food quantities on a regular basis. It's worth it!

"bible" for serving 100+ young professional musicians/staff.

The tables provided are worth the price alone but the basic recipes are invaluable. They can be adapted to different requirements. Quantities, particularly vegetables, are somewhat conservative compared to what I find needed but the age of the "fifty" (or 100)and their physical activities make a difference. It is the general guides - cooking temperatures/times/specific cuts of meats/yields of purchased bulk versus usuable portion that I find myself referring to over and over. This is also what is missing or reduced in other similar books. I have used a number of the baked goods recipes and find them all to be excellent. Seasonings are very low in most recipes but that is easily remedied - especially spices in the sweet breads and desserts and herbs in most dishes. They need to update that which I hope to find reflected in the newest edition. This book would be a great resource for any type of small catering company, restaurant with changing menu, or institutional food service.

Great book that explains how to do food service excellance!

Most referance books I use in my job (I am a cook) does not go into detail how to use math to compute how much to use or how less to use according to scale. Examples and explanation makes it so much easier to understand what is required to do the proper job. I love the equilivants of which items which could be compatable to food items. My only complaint is that sections to find measurements to total needs to be more organized to make it easier to find in the tables. At my job, this book really is considered a "bible" and I'd buy it for my own personal use!

Why does the West rule? In this magnum opus, eminent Stanford polymath Ian Morris answers this provocative question, drawing on 50,000 years of history, archeology, and the methods of social science, to make sense of when, how, and why the paths of development differed in the East and West — and what this portends for the 21st century.

There are two broad schools of thought on why the West rules. Proponents of "Long-Term Lock-In" theories such as Jared Diamond suggest that from time immemorial, some critical factor — geography, climate, or culture perhaps — made East and West unalterably different, and determined that the industrial revolution would happen in the West and push it further ahead of the East. But the East led the West between 500 and 1600, so this development can't have been inevitable; and so proponents of "Short-Term Accident" theories argue that Western rule was a temporary aberration that is now coming to an end, with Japan, China, and India resuming their rightful places on the world stage. However, as the West led for 9,000 of the previous 10,000 years, it wasn't just a temporary aberration. So, if we want to know why the West rules, we need a whole new theory. Ian Morris, boldly entering the turf of Jared Diamond and Niall Ferguson, provides the broader approach that is necessary, combining the textual historian's focus on context, the anthropological archaeologist's awareness of the deep past, and the social scientist's comparative methods to make sense of the past, present, and future — in a way no one has ever done before.

Only the supremely self-confident put forth all-encompassing theories of world history, and Morris is one such daredevil. An archaeologist by academic specialty, he advances a quasi-deterministic construct that is suitable for nonacademics. From a repeatedly enunciated premise that humans by nature are indolent, avaricious, and fearful, Morris holds that such traits, when combined with sociology and geography, explain history right from the beginning, when humanity trudged out of Africa, through the contemporary rivalry between China and America. Such temporal range leaves scant room for individual human agency: Morris names the names of world history, but in his narrative, leaders and tyrants, at best, muddle through patterns of history that are beyond their power to shape. And those patterns, he claims, can be numerically measured by a “social development index” that he applies to every epochal change from agriculture to the industrial revolution. However, the reading is not as heavy as it may sound. IAN MORRIS is Willard Professor of Classics, Professor of History, and Director of the Archaeology Centre at Stanford University. He has written and edited a number of books, most recently The Greeks: History, Culture, Society and The Ancient Economy: Evidence and Models, and has appeared on a number of television networks, including the History Network and PBS. Interesting way to view history using numerical values

A 14,000 year review of human history using a value called social development. He gives the year 2000 a base value of 1000 divided into four categories: urbanism, energy, communication and military. Each gets 250 points. History starts in 14,000BCE with a 4 or 5 score while today society gets a score of over 1000. Almost all this gain has been in the last 250 years. Progress has been ragged and often runs into ceilings and drops back for several centuries ( like the dark ages). He then uses this score in graph form and explains what was going on historically to give these results.

he then takes it a step further to compare Western (Middle east to USA) and Eastern ( China) civilizations. We watch the lines run parallel for a long period and diverge and crossover and he this way we have a race. He explains key historical events and shows how that shows up in the values and on the graphs. All very good and very informative and unique to see history told this way.

But in parts there is too much detail and thus the book is excessively long, over 600 pages. I had to speed read at least 200-250 pages and I don't think I lost anything. In fact on reviewing the book I am convinced I didn't miss anything of much value by my skimming vast sections.

He then looks into the future using his developed theories of what contributes to society and its development and hence its history. He acknowledges others who have gone before him in this endeavor, notably the geographer Jared Diamond author of Guns, Germs and Steel and Collapse ( I have also read and recommend these excellent books) His look into the future relies heavily on the dominant progress of technology and mirrors what others have said about robots, artificial intelligence, mind/machine merger etc. It is interesting to see how similar the thoughts on the future are among historians, sociologists, neuro scientists , technologists and futurists.

So if you can speed read parts that would otherwise bog you down, while stopping and pondering the significant things the author has to say and those parts that spark your interest, this book is a good and worthwhile read. In other words I would urge you to read discriminatingly and not compulsory. Everything he says does not have equal value or is necessary to know for the reader.

Like playing Sid Meier's Civilization

As can be seem by both the summary and and various book reviews, this is big history, encompassing the dawn of the first homonids (or ape-men as the author put it) to present day, with a chapter conjecturing about the future.

I was going to try and compare it to some of books in the same genre that I have read, but this book takes, disproves and/ or builds on their arguments - books such as Kennedy's Rise and Fall of the Great Powers, Jared Diamond's Guns, Germs and Steel, Pommeranz's the Great Divergence, Landes' The Wealth and Poverty of Nations - and they are all cited in his book and Morris takes pains to show how they only focus on one small piece of the picture. Indeed the feeling of reading this must have been similar for those who read Marx's Das Kapital for the first time (although the language is much more accessible and the conclusion is open ended) in that it attempts to set out underlying laws of history.

In the words of the author - "History is not one damn thing after another, it is a single grand and relentless process of adaptations to the world that always generate new problems (in the form of disease, famine, climate change, migration and state failure) that call for further adaptations. And each breakthrough came not as a result of tinkering but as a result of desperate times, calling for desperate measures." There may be set backs and hard ceilings, with free will and culture being the wildcards that may hinder social development but eventually the conditions give rise to ideas that allow progress to be made.

Indeed the motor of progress is not some economic logic, but what he calls the Morris Theorem - (expanding an idea from the great SF writer Robert Heinlein) to explain the course of history - Change is caused by lazy, greedy frightened people (who rarely know what they are doing) looking for easier more profitable and safer ways to do things. And it is geography that is the key determining factor where something develops first - Maps, not Chaps.

Now all this sounds academic and boring and in the case of the Morris theorem a little oversimplistic, but the presentation definitely is not. As professor Jared Diamond states, it is like an exciting novel (told by a cool eccentric uncle) and he uses a wide range of popular media to support his case, at one point talking about the movies Back to the Future, 300, the Scorpion King or making references to novels such as the Bonesetters Daughter and Clan of the Cave bear to bring conditions to life. Indeed the emotional similarities (and sheer sense of fun!) to playing early versions of the Sid Meier's Civilization Computer Game are uncanny.

There is a wide range of material here to satisfy a range of interests - his summaries of the fossil record, and early middle eastern and Chinese history are succinct and clear. Especially on the Chinese side, I had to read 2 books - the Golden Age of Chinese Archaelogy and the Cambridge History of Ancient China to gain the same understanding of what he summarizes in about 7-8 pages. He discourses on the role of the Axial religions, on whether democracy was important to the rule of the west, the role of free will in history, and on provocative ideas like the Qin and Roman empires expemplifing what he calls the paradox of violence: when the rivers of blood dried, their imperialism left most people, in the west and the east better off. I could go on and on and, of course, there may be many experts who take issue with his interpretations (and his predictions) but it will definitely stimulate thinking.

If I had to make a criticism of the book - it is that, like Marx, it is fundamentally materialistic in its approach, ideas are like memes that facilitate social development and culture is something that can help or hinder development but has no value in itself. The great religious ideas are glossed over as a product of or reaction to their times. It has precious little to say about the spiritual life and spiritual discoveries such as ethics, meditation or psychology. It may be these discoveries and qualities that will be required to get us through the challenges - of climate change, overpopulation, resourse shortages and potential nuclear war.

It is worthwhile comparing the book to two writings that he cites as inspiration (1) Herbert Spencer - Progress its Law and Cause and (2) Isaac Azimov's Foundation series. In each case they try to identify the forces that drive humanity but Spencer just doesn't have the data in the 19th century and the historian Hari Seldon is joke amongst professional historians as the novels seem so implausibly optimistic about what history can do. I don't know if Ian Morris has succeeded in identifying the laws of history but this book could only have been written now, at the end of the first decade of the 21st Century, drawing together the strains from archaeology, genetics, linguistics as well as sociology and economics to create something altogether new and wonderful and accessible to that elusive thing - the educated lay reader.

Big Picture, Big Ideas, and a Terrific Read

This is one of the most interesting books I have read in a long time, even if the author's arguments don't always convince me entirely. But he does attempt an heroic task -- explaining the broadest rhythms of human history -- and he does offer brilliant exposition. Also, the book is a pleasure to read: Morris is an entertaining and sometimes amusing writer whose prose is refreshingly free of academese. What's best about the book, I think, is its presentation of history outside the narrow confines in which we in the West tend to think -- "modern" European history, i.e. European and North American history since the Renaissance. Morris shows that other cultures have shown parallel patterns, in the process teaching me a great deal that I did not know about ancient history apart from the Greeks and Romans, and about Chinese history. The tool that he uses to compare different cultures is an index of social development: he recognizes that there are a whole lot of questions about this, but in general offers it as a very rough and imprecise measure: as a metaphor, I can live with it. The final section of the book, on where we go from here, was interesting (and scary) though I found it a bit less gripping that Morris's views on where we have been. All in all, and enjoyable and mind-opening book.

Ari�s identifies the first major shift in attitude with the turn of the eleventh century when a sense of individuality began to rise and with it, profound consequences: death no longer meant merely the weakening of community, but rather the destruction of self. Hence the growing fear of the afterlife, new conceptions of the Last Judgment, and the first attempts (by Masses and other rituals) to guarantee a better life in the next world. In the 1500s attention shifted from the demise of the self to that of the loved one (as family supplants community), and by the nineteenth century death comes to be viewed as simply a staging post toward reunion in the hereafter. Finally, Ari�s shows why death has become such an unendurable truth in our own century—how it has been nearly banished from our daily lives—and points out what may be done to “re-tame” this secret terror.

Previewing Mortality

Phillipe Aries takes on an impossible challenge, how eons of people have regarded death, what they thought both of and about it. It's an honest attempt to view the subject from as many disparate theologies and belief systems as are germane and then synthesize them. It's long, and not always as accessible as one might wish but much of this problem is due to a stilted translation. Those with a knowledge of French will note passages where idiomatic French has received a direct translation rather than a rewritten one which would make it flow more sensibly. What it is not is the morgantic cousin to "The American Way of Death" published decades ago. But some of the humor and lightness of touch that volume had could have been helpful. In some cultures, and this is noted, death is a joyous event. Current society has trivialized death (discount casket shops, drive through funerals) and the current turn to evangelism makes death a punishment for many. Aries is careful to see that all points of view are represented but adroitly avoids drawing conclusions. Death is what it is. Think about it. This book provides new insights in how to do that leaving the reader to draw their own conclusions.

Death in Western History

This is a comprehensive survey of one thousand years (longer, really) of western attitudes towards death. By "western" were mostly talking "French", although Aries does include digressions into German, Italian, Spanish, English and American culture. I didn't find the intense focus on France to detract from the overall majesty of this 600+ page opus. For most of the thousand years, the "attitude towards death" that Aries is describing crosses national boundaires.
Aries divides his study into four overlapping historical periods: "The Tame Death", "The Death of the Self", "The Death of the Other", and "The Invisible Death". The Tame Death roughly corresponds with the pre-Christian and early middle ages. This period was characterized by a meek acceptance of passing into a long period of sleep. Death is social, and the death ritual has a central place in the society.
"The Death of the Self" is moves more into the middle and late middle ages. Here, death is used by the mendicant orders of Christianity to convert a quasi-pagan population. Thus, there is a corresponding rise in individual's concern with their own death. Also during this period, there is a rise in materialism, which creates a duality between the love of things and the renunciation of the material world which is supposed to preceed death.
The Death of the Other and the Invisible Death are familiar to most modern folks. The Invisible Death is corresponds with the post WWII American model, and the Death of the Other largely corresponds to the romantic movement (lots of weeping, lots of drama).
Aries basic thesis delves into "the Invention of Tradition" territory, i.e. that modern attitudes towards death are just that, modern, and largely without antecedent in history. Aries also points out that pre-Christian traditions of death have persisted far longer in the west then one might suppose. His main illustration for this contention is the observations that the concept of "purgatory" was not fully accepted until well into the 17th and 18th century (purgatory being an exclusively Chrisitian concept).
The research and execution can only be considered awe inspiring, but the thesis less so. Any modern reader of history is aware that "tradition" is invented. Aries is less concerned as to why this might be the case, but for me, the "why" is the interesting question.

This a deep study of how death has been dealt with thru the centuries in Europe and to some degree in the United States. Is as methodical as you could possibly hope for in a book it also most feel like you're reading a manual more than a treaty, anyhow is a good read just not a engrossing read.

About the Author
Alan Sultan is a professor of mathematics at Queens College. In addition to this text, he is the primary author of the textbooks "Linear Programming: In Introduction with Applications" originally published by Academic press, and "The Mathematics That Every Secondary School Math Teacher Needs to Know" published by Routledge. He is a secondary author of "Implementing the Common Core State Standards through Mathematical Problem Solving: High School" and Implementing the Common Core State Standards through Mathematical Problem Solving: Grades 6-8" both published by NCTM. He is also an author or coauthor of about thirty five research and expository articles as well as the recipient of grants and teaching awards including the Queens College Presidential Teaching Award for Excellence in Teaching.

An Excellent Companion Text for any Analysis Course

I recently had a chance to read through Alan Sultan's "Primer on Real Analysis", and I must say that of all the entry-level texts on the subject, this is far-and-away the most user-friendly.

Dr. Sultan takes a difficult subject and gives a treatment that is both thorough and easy-to-understand. He speaks in a conversational tone and yet never skimps on the particulars. Many texts (Lang, Royden, etc.) assume reader knowledge well beyond that of the typical college undergrad or early grad student. Not this text- if you are an expert analyst you may find little use for this book beyond that as a reference, but if you are new to the subject, this book may be a life-saver. The text explains each important concept in sufficient detail, supplying pictures and additional exposition when such extras are most needed. Sultan provides the intuition behind each proof and often outlines the plan he will use step by step. I know of no other book that is so thorough and student-oriented.

While the text is accessible to both the average undergraduate and early graduate math student, newcomers to the subject (or those who have struggled with needlessly dense "standard" texts) will find the most to love. As the title implies, this is a "primer", and not meant to be a be-all-end-all analysis bible. That having been said, it does what it does VERY well, and for the price, it's well worth the investment.

A Great Way to Approach Linguistics

First of all, I have the pleasure of being in Dr. Andrews' Principles of Linguistics class. This book is being used as the required text for class and it is simply WONDERFUL. The text is written for students and teachers in such a manner that it is easy to understand and relate to. (Unlike some texts which are written simply for the community of the academic "elite.")
Dr. Andrews takes a wonderful approach to Linguistics, emphasizing the importance of context in any situation to determine what language use is appropriate. Rather than simply telling students that word usage or sentence structure is wrong, this book both analyzes reasons for why these uses may be deemed incorrect and, at the same time, urges teachers to recognize the individuality and expression that can be found in language.
Overall, this book makes studying Linguistics a sheer joy. I can't remember how many teachers pushed correct grammar usage as the primary focus of English classes in high school. This book really tries to step away from that habit and promote a true love of language. I highly recommend this book to anyone who is planning to study Linguistics, teach English, or simply explore the wonders of our own language!

I became interested in the importance of rest in creative lives began when I noticed a paradox: many of history's most accomplished thinkers, artists, writers, and composers organized their lives around their work, but not their days. Figures as diverse as Charles Darwin, Salvador Dali, and Maya Angelou think about their work constantly, and achieve much more than most of us, yet they spend fewer hours laboring than we do. What accounts for their success?
The key is not the quantity of their work, but the quality of their rest. Many super-creative and -productive people take a distinctive approach to rest.�

Alex Soojung-Kim Pang is founder of The Restful Company, and a visiting scholar at Stanford. He is the author of two previous books: Empire and the Sun (Stanford, 2002), and The Distraction Addiction (Little Brown, 2013), and for more than a decade has worked as a technology forecaster and consultant. His writing has appeared in Scientific American, the Atlantic Monthly, Slate, Wired, and American Scholar, and numerous scholarly journals. He lives in Menlo Park, California.
